Today's recipe is one that'll warm your heart and satisfy your soup craving. This Starch Solution Mushroom and Onion Soup is a staple in my household and I know you'll love it!
I served mine with white rice but this would go great with potatoes too! š

- Ingredients:
- 1 yellow onion
- 1-2 cloves of garlic (minced)
- 2-3 cups of sliced mushrooms (I used frozen)
- 1.5 tablespoons of soy sauce
- 1.5 tablespoons vegan Worcestershire sauce
- 4 cups vegetable broth
- 1 tablespoon balsamic vinegar
- 1 tablespoon dry dill
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- 1/2 cup non-dairy milk
- 1 teaspoon lemon juice
- Directions:
- Sautee your onion and garlic until golden brown *Add in a little veggie broth to reduce sticking
- When your garlic and onion are golden brown, add in your sliced mushrooms
- Simmer the mixture over medium heat and add in your wet ingredients (soy sauce, Worcestershire sauce, lemon juice)
- Then add in your vegetable broth

- Add in your spices and bring to a slow boil
- Cook for 5-8 minutes and then add in your milk
- Take off the heat, pour up a bowl, and enjoy!
