Starch Solution Rice Stuffed Mushrooms Full and Fulfilled Recipe

Today, I'm excited to share another delicious Starch Solution approved recipe with you!

These Stuffed Mushrooms are perfect for when you want to empty out your fridge and use your left-over rice.

Here's the recipe:
🍄Stuffed Mushrooms with Veggies and Rice 🍄

Ingredients:
Diced zucchini
Diced bell pepper
Diced red onion
Portabello mushrooms (or similar)
Cooked white rice
Smoked paprika powder
Garlic powder
Cumin
Oil-free hummus

Directions:
Air fry or bake your zucchini, pepper, and onion at 400 degrees for 30 min
Add all of your ingredients to a mixing bowl and give it all a stir with 2 tbsp of hummus (spices are about 1 tbsp each but you can use as much as your heart desires)
Stuff your mushrooms with your mixture
Pop your mushrooms in the oven at 400 degrees for 15 min.
